  • 8 oz. whole fresh mushrooms
  • ½ cup whole wheat flour
  • Oil for frying (olive or peanut oil)
  • ½ teaspoon of salt
  • ½ teaspoon of ground black pepper
  • ¼ teaspoon dry mustard
  • ¼ teaspoon paprika
  • ½ cup buttermilk
  • Pinch of cayenne pepper

Directions:

  1. Gather the ingredients.
  2. Wash the mushrooms and trim removing most of the stem. Pat mushrooms dry with paper towel or set aside and leave to dry. Cut into pieces if you so desire.
  3. You’ll need two bowls, so set them out. In one bowl or a plastic bag, pour in the flour, salt, black pepper, cayenne pepper, mustard and paprika and mix to combine. In the other bowl, pour in the buttermilk.
  4. Place mushrooms in buttermilk and shake to coat. Lift them out of the buttermilk and toss them gently into the flour mixture. Make sure the mushrooms are evenly coated.
