Strawberries and Cream

Who loves fresh strawberries and cream on their cake? If you aren’t a fan of fresh strawberries and cream, you can swap it out for the jam of your choice.


  • 1 box Trader Joe's cake mix
  • 2 large egg
  • 1 stick melted butter
  • 1 cup cold milk
  • 5 oz. cream cheese
  • 5 tbsp unsalted butter
  • 2 cups confectioners sugar
  • a few drops of vanilla extract
  • fresh strawberries ( or fruit of your choice)
  • jam


  • Start by preheating your oven to 350 degrees and grease your baking tray with butter. I recommend using a long, shallow baking tray for baking this cake.
  • Pour the cold milk, whisked eggs, and melted butter into a bowl.
  • Slowly add the cake mix and mix together until the mixture turns into a smooth batter.
  • Pour the mixture into the greased tray and bake until the cake is ready. Use a toothpick to see if the cake has cooked all the way through. This may take you 20 minutes, or it could take 30 minutes; it all depends on the tray you use and your oven.
  • Let the cake cool completely.
  • Mix the butter and cream cheese in a mixing bowl and mix until smooth and well incorporated. Add vanilla extract and powdered sugar, and continue to mix until smooth.
  • Spread the jam and cream cheese mix on the cake, then cut the cake in half and stack the two halves on top of one another.
  • Top the cake with the fresh fruit of your choice.
